Are you looking for a quick and easy appetizer or snack that is also healthy? 

Why on the vine tomatoes? Tomatoes are more than 90% water and are low in sodium – great for any diet! A tomato also contains vitamin c – on the vine tomatoes contain nearly twice the vitamin c as green tomatoes!

Try this recipe for oven roasted vine tomatoes

Ingredients

Olive oil

Sea salt

Tomatoes on the vine

 

Directions

Place tomatoes (keeping on the stem) on a baking sheet with olive oil and salt.  

Roast at 350 F for 20 minutes, or until the tomatoes are soft and the skin begins to caramelize

Serve with cheese and/or bread
