A Light Side for a Hot Summer Day
They call ‘em the Dog Days of August. The days that seem to wear you out from the heat. And, the forecast for tomorrow doesn’t look much better. We found this great light dish from Rachael Ray we think you’ll love. Here’s all you need:
1 pound bow-tie pasta
2 tablespoons extra-virgin olive oil
2 garlic cloves, smashed
1 pint cherry tomatoes
3 ears fresh corn, kernels cut off
2 tablespoons unsalted butter
1/4 cup fresh basil leaves, torn into pieces
Cook up the pasta as you normally would. Put the garlic and tomatoes in a skillet with the olive oil until the tomatoes are soft. Add in the corn and cook until it’s heated all the way through and golden. Toss it all together with the vegetables, butter, and basil. Super easy, and not too heavy for a summer dish. See more here.
