Curry Roasted Chicken Drumsticks

This week, Fresh Madison Market has Gerber Amish Chicken Drumsticks for just 99-cents a pound.  The creative cooks at Big Oven offer up this fantastic dish that will turn ordinary chicken drumsticks into a flavor filled feast!

Here’s what the recipie calls for:

8 chicken drumsticks (on sale this week!)

2 head cauliflower, cut into florettes (only $1.99)_

red skinned potatoes, quartered

1 lb of 3 tablespoons olive oil

2 teaspoons each ground coriander, cumin, and black pepper

1 1/2 teaspoons kosher salt

1/4 teaspoon ground turmeric

1 tablespoon curry powder

1 teaspoon each ground cumin, coriander, kosher salt

Chopped fresh cilantro

 

Combine the curry powder, cumin, coriander, salt, and drumsticks.  Then toss together the cauliflower, potatoes, olive oil, coriander, cumin, pepper, salt, turmeric, and cilantro.

Preheat your oven to 475 degrees with two baking sheets inside.  Combine the Gerber chicken drumsticks with curry powder, 1 teaspoon each of coriander, salt, and pepper in a plastic bag.  Toss to coat the drumsticks.

Take the veggies with oil, 2 teaspoons each coriander, cumin, and pepper with 1 ½ teaspoons of salt and turmeric to coat.

Place drumsticks onto one hot baking sheet and veggies on another.  Roast 10 minutes, flip, then roast until drumsticks are 175-degrees and veggies are tender when poked with a fork. 

Garnish with cilantro, and serve!
