Cheesy Chicken, Rice and Vegetable Casserole Recipe

Do you know comfort food? You will when you try this delicious Cheesy Chicken, Rice and Vegetable Casserole! With only a 15-minute prep time, you will be on your second plate in no time. This creamy, hearty casserole is great for the whole family, any night of the week, any time of the year!



1 can Campbell's™ cream of chicken condensed soup

1 1/3 cups water

¾ cup uncooked white rice

½ teaspoon onion powder

¼ teaspoon ground black pepper

2 cups frozen mixed vegetables

4 boneless skinless chicken breasts ($2.99 /lb. of Gold’n Plump Bonesless Skinless Chicken Breast in a family pack this week)

½ cup shredded cheddar cheese ($5.99 of Our Family Shredded Cheese 32 oz. in assorted varieties)



  • Heat oven to 375° F. Stir soup, water, rice, onion powder, black pepper and vegetables in a shallow baking dish (2 quart).
  • Place chicken breasts on top of rice mixture. Season as desired. Cover the baking dish and place in oven.
  • Bake 45 minutes or until the chicken is cooked through and the rice is tender. Top with the cheese. Let the casserole stand for 10 minutes before serving.
