5 Easy Recipes with Rotisserie Chicken

It’s an easy grab-and-go main dish, and you know it will be tender and juicy. As good as it is by itself, there are many things you can do with a rotisserie chicken to jazz up tonight’s dinner. This article from the Los Angeles Times has several great ideas. By adding some fresh ingredients like tomatoes on the vine, this week only $1.29/lb, or whole mushrooms (Three 8-ounce packs are just $5), you can make something extra special! Chicken noodle soup – Bring chicken broth to a simmer. Sweat onions and combine with carrots and celery in with noodles, other vegetables such as peas and potatoes. Chopped rotisserie chicken and add fresh herbs to suit your taste.

 

Burritos - Combine shredded chicken with black beans, rice, lettuce, cheese, guacamole, sour cream and pico de gallo in a large, warmed tortilla. Roll the burrito, top if desired with chile sauce and more cheese before serving.

 

Barbecue chicken sandwich – Shred or chop rotisserie chicken and combine with barbecue sauce. Serve on toasted buns topped with coleslaw.

 

Chinese chicken salad - Combine chopped lettuce and shredded cabbage with drained canned mandarin oranges, sesame seeds, chopped chicken and sesame ginger dressing in a large bowl. Serve with slivered almonds or fried wonton strips, chopped cilantro and green onion as garnish.

 

Lemon chicken pasta with basil - Chop chicken and sauté for a few minutes to warm with some chopped garlic and mushrooms. Drizzle fresh lemon juice over the chicken and toss with pasta, shredded basil, and freshly grated Parmesan cheese.
