Scrambled Egg Tacos

You can do more with eggs than just boil or fry them.  Here’s a fantastic recipe from Woman’s Day that’s a new twist on both eggs and tacos!  Instead of ground beef, we’re going to use scrambled eggs.

You’ll need:

2 tbsp. olive oil

1 (15-oz) can black beans, rinsed

1/2 tsp. cumin seeds

1 clove garlic, finely chopped

Kosher salt

Pepper

4 c. baby spinach

1 tbsp. fresh lemon juice

8 large eggs

8 yellow corn tortillas
