Baked Sweet Potato Chips

Ingredients

2 large sweet potatoes

2 tbsp melted coconut oil

2 tsp dried rosemary

1 tsp sea salt

Instructions

Preheat oven to 375 degrees F. Peel sweet potatoes and slice thinly. In a large bowl, mix sweet potatoes with coconut oil, rosemary, and salt. Lay sweet potato chips in a single layer on a rimmed baking sheet covered with parchment paper. Bake in the oven for 10 minutes, then flip the chips over and bake for another 10 minutes. For the last ten minutes, watch the chips closely and pull off any chips that start to brown, until all of the chips are cooked.

Baked Tortilla Chips

Ingredients

1 (12 ounces) package corn tortillas

1 tablespoon vegetable oil

3 tablespoons lime juice

1 teaspoon ground cumin

1 teaspoon chili powder

Instructions

Preheat oven to 350 degrees. Cut each tortilla into eight wedges and arrange the wedges in a single layer on a cookie sheet. In a spray mister, combine the oil and lime juice. Mix well and spray each tortilla wedge until slightly saturated. Combine the cumin, chili powder and salt in a small bowl and sprinkle on the chips. Bake for about seven minutes. Rotate the pan and bake for another eight minutes or until the chips are crisp, but not too brown. Serve with salsa!
